Make up some angel hair pasta with the sauce of your choice. Then toss the cooked shrimp in with it.
Chop it up and make shrimp salad out of it for sandwiches.

BCAR has a good idea with quickly grilling them. Like he said, you can add them to pasta, make them into shrimp salad....or make a shrimp caesar salad.
While I was in New Orleans, I had BBQ shrimp which actually consisted of baking raw shrimp in butter, worchestire sauce and creole seasoning. It was so simple, but so good! I'm not sure how that would translate with pre-cooked shrimp, though. |  |
